Hmm, maybe an even longer one, "--field-separators-list", to make it
100% obvious it's a list of separators?

I'd be fine with that, too.  (I'm not a native English speaker, but I
think that should be "--field-separator-list").

Strictly grammatically, that's a bit debatable. In general, it should use the singular form, but in this particular case, the plural form simply feels better, which of course is subjective. (I'm not a native English speaker either.)
