Give \hide, \omit, \undo more exposure

This uses temporary convert rules in order to make (mostly) the
documentation use a lot more of those commands.  \undo \hide and \undo
\omit are only used on properties that also have \hide/\omit done on
them in the same file.  A few files in ly/ are omitted in order to
avoid circular definitions and possibly noticeable inefficiencies.
