Also sometimes if you are using a predefined string as opposed to a variable it can be as simple as VMarkI = { \markup \huge \bold "VI"} {a b c^\VMarkI d} Without having to get too complicated. Just remember that you cannot use numerals in the name of the function (i.e. in my example VMark1).
I knew this.The point in my case is really not have predefined strings but to have a class of strings (i.e. a style sheet). So I can enter the actual strings in the music but have them formatted centrally (for example to group instrument names and performance instructions separately, or to print instrument names bold while editing and normal for the publication ...)
