That would be one solution.  I think there are some Mac text editors
which can directly save in ISO 8859-1 (BBEdit?).

You could define a new mapping (cf. the *.LCM files) and matching font
definitions (cf. fontdefs.ld), but I don't know if it's worth the
effort.
