It does because you (or sysadmin) told it to do so. :)
Lynx sends some MIME types in accept headers on its own and picks up the rest
from the mailcap files. Take a look at ~/.mailcap, /etc/mailcap,
/usr/etc/mailcap and /usr/local/etc/mailcap. It's there. Just remove it.
It could be that mailcap files are not at these places on your system and
you'll have to look elsewhere. But it's in (at least) one of them.
