IMO it's unfair to add a new option and make it default in one step. One 
should add a new option, wait some releases and make it default if 
there is a request for this (by users).

The question is who does want this quotes and even worse escapes? For 
sure not those people who are using the most "nice" filenames 
like "Don't README.txt". Now it looks like this.

$ touch "My Brother's stuff"
$ touch "Don't README.txt"
$ ls
'Don'\''t README.txt'  'My Brother'\''s stuff'

...ridiculous! Terminal output should be human readable not machine 
readable.
