What I want is more or less the exact behavior of xdg-open, but I want to be able to check the actual command (e.g. "evince", not just "xdg-open") before pressing RET.
xdg-mime query default $(xdg-mime query filetype FILE)should return the name of one of the files /usr/share/applications, and you can check for the line starting with Exec in that file to see what command it launches.
