This issue is not specific to the Mac builds. The screenshot in the manual 
is out of date.

In the current GUI, the sheet-and-pencil button starts editing a position 
and the $ button starts a money session.

The numbered buttons are shortcuts to start a match of the selected number 
of points but you can manually choose other match lengths with the widget 
below (0 there would be a money session).

I'm not sure what you mean by "How is the value set?". If this is a stake 
limit, this feature is not available.
