I figured out the 'defaults' command.

thanks a boatload for your help!  I got the timezone fixed, as well as
the backend bundle.  When running GNUMail with back-art, this is the
next error I found:

neptune:...System/Library/Bundles> openapp GNUMail                    
         2003-06-04 18:32:20.881 GNUMail[85503] No fonts found!
neptune:...System/Library/Bundles> 

This should be an easy fix, right?
