This idiscussion s reminding me of the following ESS functions

ess-add-ess-process M-x ... RET
Execute this command from within a buffer running a process to add
ess-request-a-process M-x ... RET
Ask for a process, and make it the current ESS process.
ess-switch-process M-x ... RET
Force a switch to a new underlying process.

Are these relevant to the question?
