How are you passing the flags?

I just tried:

./configure --prefix=/usr/local/glusterfs 
{,GF_FUSE_,GF_GLUSTERFS_,GF_}CFLAGS="-fprofile-arcs -ftest-coverage"

and was able to build it fine.
