If I understand you correctly you are not using the latest version of GNUmed 
(0.8.6) and server 0.8.x yet ?

Do you have the menu to chose 'write letter' and the option to select the 
latex template for it ?

You can send us a screenshot of the menu if you like (there is an option for 
screenshots in GNUmed).

You are using Ubuntu ? which version ?
