That should work, yes.

After restoring, did you see any other problems (say, running 
gm-adjust_db_settings.sh) ?

Also, restoring the roles likely didn't do everything quite
right, which may not matter, however, since you restored into
a PostgreSQL cluster which did have a working GNUmed
installation (and likely had, of gnumed_v17).
