I have very little knowledge of the needs and desires of a blood bank.
However, from a naive view, it would seem that, in general, a blood bank
has needs similar to any other product-centric business - like, tracking
products, storing info about the products, and handling disbursement.
Things like that. Just with blood products. Tryton handles those
fundamentals really well already. Probably can't do justice to all its
functionality. But, I think, a specific module with preloaded data and
other specific needs would be great. Others can chime in if they want.
Tryton docs are a good start. Also, I've found reading some of the
source for the GNU Health modules very helpful. =-)

Here's a start: http://who.int/bloodsafety/en/

The Global Database On Blood Safety questionnaire would be interesting
to include.
