You can create any product and variant for your institution, and then
assign them to the service document.
The products that you see in a standard GNU Health installation are for
reference, and seldom are used, since each institution has its own list
of products and services.
For testing purposes, I recommend you to login in to the community
server[1], create you Health encounter product(service), assign it and
invoice it.
