May you clarify your question? You don’t configure cash payment as such. You have to adjust the real processes to the Tryton accounting procedures.You start the payment process by creating a health service in GNU Health (see Health services in the official Tryton documentation).  This health service is converted into a draft invoice. After validating the invoice, you can issue a payment.
You need to configure the accounting module prior to using the accounting functionalities of Tryton.
