[h-e-w] Q Making the font selection permanent

I know how to select a font using <shift> and mouse-right-click but I'm unable 
to make the font selected permanent.

I seem to remember it should be possible to select the font in the 
options->customize menu and make it permanent using the options->save options 
menu but I'm unable to find the option to set.

Could some kind emacs'er tell me the right option?

BTW I'm using a nice fixed width font called ProggyClean, a web search should 
get you to the web site for a free download.
