Word frequency text profiling

Hi,

is there a package which does

   Word frequency text profiling?

Task would be to profile a text against the most
   frequent word families of given lists.

Also I need this on the level of letter- and sign
frequency patterns.

The latter to transform plain text letters into xml,
let Emacs recognise the address part, reference part and
so on.
