You can edit these keybindings (including Meta and Shift, including
multi-keysstroke bindings) by editing
~/Library/KeyBindings/DefaultKeyBinding.dict.
Or use http://www.cocoabits.com/KeyBindingsEditor/

All applications using the Cocoa-Libraries have this feature, Apple
and non-Apple.
