Dired works only on existing files. And directories. Although there is an exception ... see below!

Is C-x C-f the only way to create a new file in dired or is there a one-key key-binding?

No. You can use *shell* or such buffers to create new files, you can copy or rename, or in dired-mode:

        ! t o u c h SPC <file name>


On a different note, do you use bookmarks extensively?

No. And neither intensively. Not at all, for short.
