See C-h v calendar-holidays RET.

In order to have only the christian holidays displayed I set:
(setq holiday-hebrew-holidays nil)
(setq holiday-islamic-holidays nil)
(setq holiday-oriental-holidays nil)
(setq holiday-bahai-holidays nil)
