Have you tried (info "(elisp) Sentinels")? The info already provides a nice 
example, here is another example:

(set-process-sentinel
 (start-process "sleep" "*sleep*" "sleep" "3")
 (lambda (_process event)
   (when (string= event "finished\n")
     (message "TODO Do something"))))
