Hi,
it's more a question, but afaik one can set the log-dir in the config
file. What would happen if one would set it to /dev/null? Would that
cause what tu wants or would it prevent radiusd from running?

You cannot shut up the log output altogether. If you wish
to spare the disk storage, install an appropriate policy of
truncating/removing the old log files. Consider using
logrotate (visit
http://packages.debian.org/unstable/admin/logrotate.html).
