It is not the ISO part that boots, it is the MBR part of an hybrid image. A pure ISO filesystem is not bootable on a USB flash drive, only on an optical disc.
I need it to also boot on machines using UEFI.
Create an EFI partition, mount it as /boot/efi and install GRUB with --removable.
