While I'm here, the above sequence seems to be remembered somehow as the next time I start the same Virtualbox image it just boots to W10 with no intervention. Is grub somehow remembering the above for me or is it Virtualbox?
No, GRUB does not remember commands across boots. I also doubt that VirtualBox knows anything about GRUB commands history. Maybe Windows boot manager modified EFI boot entries and took precedence over GRUB.
