I would use ‘substitute*’ from (guix build utils) to patch the
references to /bin/sh
(lambda* (#:key inputs #:allow-other-keys)
(let ((sh (assoc-ref inputs "bash")))
(substitute* "some-file"
(("\"/bin/sh\"") (string-append "\"" sh "/bin/sh\"")))))
