Make sure the plot is 3D.  Try the two examples below.   Is the aspect ratio of 
both the same?

        figure (1)
        clf ()
        peaks ()
        set (gca (), "plotboxaspectratio", [1 1 1])

        figure (2)
        clf ()
        peaks ()
        set (gca (), "plotboxaspectratio", [1 1 2])

If they are the same, please try dataaspectratio instead (I recall these two 
were reversed as compared to Matlab in the past).

        figure (1)
        clf ()
        peaks ()
        set (gca (), "dataaspectratio", [1 1 1])

        figure (2)
        clf ()
        peaks ()
        set (gca (), "dataaspectratio", [1 1 2])
