Which gnuplot terminal do you use. (I assume x11)
See if you get the same problem with wxt:
$ GNUTERM=wxt octave
I get exactly the same plot with wxt.
The attached part image shows the problem, parts of the surface not drawn.
Now you know what to look for, do you see the same result?
