Hey Oli,
I think the author in this video (and Udacity course) is just using a
slightly outdated version of the Octave image package. Before image package
version 4.2.0 (released in April 2015) the results of normxcorr2 were buggy
and Matlab incompatible (and not staying in the interval between -1 and 1).
