Don't think LDFLAGS should be needed. Why not just make install
DESTDIR=<unwind-inst-dir>?

Did you try running configure after libatomic_ops was installed?

Many of these are generic autoconf questions. Also suggest trying
mailing lists that are dedicated to this topic.
