Voilà, j'y suis (presqu')arrivé en consultant vos conseils et la
documentation des portées multiples.

Il faut définir la portée comme \staffGroup :

\new GrandStaff \StaffVioloncello

Puis :

staffVioloncello = \new Staff {\VoiceVioloncello}

avec :

voiceVioloncello = {
        \voiceVioloncelloPI
        <<{\voiceVioloncelloPIIA}
                \new Staff {\voiceVioloncelloPIIB}
        >>
        \voiceVioloncelloPIII
        <<{\voiceVioloncelloPIVA}
                \new Staff {\voiceVioloncelloPIVB}
        >>
        \voiceVioloncelloPV
}

\voiceVioloncelloPI : première partie, unique

\voiceVioloncelloPIIA et \voiceVioloncelloPIIB : seconde partie, deux voix
séparées

\voiceVioloncelloPIII : troisième partie, unique

\voiceVioloncelloPIVA et \voiceVioloncelloPIVB : quatrième partie, deux voix
séparées

\voiceVioloncelloPV : cinquième partie, unique.

Chaque partie doit commencer par la clef (ici, fa) et par un \relative { ...
}

Je ne sais pas exactement comment ça fonctionne, mais ça marche.
