First, thanks for your report. Linphone source code for Android is going to be released in the coming days under GPL. So I'm confident you will manage to change the display name.

About  issues you met, see my answers inlined:

I've tried it, but found some problems:
1/ I cant see anywhere, whether I'm registered to proxy or not :(
[JEH] A status message is displayed at the very bottom of the screen (see screen shot)  
2/ when I want to make outgoing calls, can't choose a person from contacts but have to fill "sip:address@hidden"
[JEH] This is because you are not successfully registered. As for regular Linphone, using phone number as destination address is only allowed in case you are successfully registered, otherwise, you have to fill a complete SIP uri
3/ when I make a call and it fails, can't make another call cause it thinks there's already one call existing
[JEH] Can you provide us with  console logs from adb
4/ On the other side, I see "sip:address@hidden" as a caller, but who the hell is jehanmonnier? I've never filled this name anywhere :)
[JEH] it's me :-), it means there is no user configured yet, can you double check your settings ? 

Like linphone and hope it'll work great on my android
