Great! I'll push a new version of the manifest if everything builds fine with
updated dependencies and a current Octave tarball.
I wouldn't mind the Flathub manifest being the reference, it would make things
easier.
Today, there were a few issues being filed here:
https://github.com/flathub/org.octave.Octave/issues
#4 and #7 should be investigated, maybe they resolve themselves after updating
to the latest tarball.

Git sources can point to the tip of a branch by simply not specifying a
branch/tag/commit. For archive sources, a workaround with sed would be
necessary.
