Assuming one uses an unicode-aware editor to prepare the
templates, using the LaTeX packages
\usepackage[...options...]{ucs}
\usepackage[utf8x]{inputenc}
( http://ctan.org/pkg/ucs )
and enters non-ASCII text into GNUmed this should already be
possible. I agree xetex is designed to make this easier I
have to point out that xetex is still in development AFAIR.
I do admit I'm having trouble actually replicating this with
Japanese but I'm sure given the right setup it'll already
work.
