This could be a number of things:

- The FluidSynth "gain" parameter, if the sound is too quiet try raising
it "set synth.gain 0.8" for example.
- Reverb settings, these are also accessible through the settings
interface (type "settings" for a list of all parameters)
- Chorus settings..
- The conversion between GigaSampler and SoundFont could lose much
information about the instruments

I'm not sure I know exactly what you mean though. You could also try
Swami (http://swami.sourceforge.net) which will allow you to edit your
instruments. You might be able to tell whats wrong with them through
there, and you can also adjust Reverb, Chorus, etc graphically. Cheers.
