I did have a FluidSynthReleases WIKI page on the old site, but it was
rather outdated since most of it had to do with resonance.org and
savannah.

Off the top of my head:

 * Update the version in the configure.ac to reflect 1.1.2
 * Also update the library versions in configure.ac as per the
embedded documentation (i.e., if there is any new C API and what not).
 * If there are any new API features or settings, they should be
documented in the developers reference document.
 * Update man page with any new command line or settings options (the
new voice stealing system would be a good thing to describe)
 * Do a "make dist" to build the tarball.
 * Upload tarball to SourceForge
 * Announce the release on:
   - freshmeat.net
   - LAA list
   - fluid-dev

There are probably other sites which may also be good to announce
releases on, but that is all I have been doing. If you have a
freshmeat account I think I could give you permission to make
FluidSynth releases, not sure exactly how that works. Or I could just
make that announcement myself if that is easier.

I've never used free-wheeling mode myself, so I'm no help there.
Perhaps one of the simple Jack audio recording apps would have such a
mode?

Awesome! Its great to hear of all the work you have been doing.
Hopefully I'll have access to a system soon that I can try it out on.
