Well, the sentence "...the action to sustain only note depressed before sostenuto..." is short and not precise and consequently a little confusing.
‎It would have been better to write " Only notes depressed (i.e noteOn) before sostenuto (i.e SostenutoOn) will be allowed to be sustained.
Thoses notes will be sustained on noteOff  if sostenuto is find depressed".
 
This is like Sostenuto behaves on piano. The implementation proposed in this patch for Fluidsynth follows this behavior.
I hope you will be reassured. Anyway, everything is easily verifiable.

Still, it's not especially piano-like.  But, then, an on/off pedal isn't especially piano-like to begin with.

As long as the implementation is consistent with common practice, I'm happy.

You forgot to mention that sostenuto doesn't really work for the Gymnopédies anyway as it clashes with the right-hand phrasing.  Someone with a much faster left hand than mine could manage with a bass-sustain pedal, I suppose.  A 30cm pinkie would work too. :)
