[Automake-NG] [FYI] [ng] tests: simplify munging of header-vars.am ...

* t/am-xargs-map.sh, t/ensure-dir-exists.sh, t/internals.tap,
t/memoize.tap: ... here, since that files no more contains
'@foo@' substitutions nor '?COND?' transforms.
