Any object typeset by LilyPond can be turned off of made invisible by
setting the property called transparent, as is described in
http://lilypond.org/doc/v2.4/Documentation/user/out-www/lilypond/Common-tweaks.html
I'm afraid it would be impossible to add such an example for every
single object in the manual.
To find out how to do this for bar numbers, read the section in the
manual called "Constructing a Tweak".
