how about \score { noteNames = "deutsch" . . } or \score { noteNames = "italiano" . . } or \score { noteNames = "english" . . } or maybe have the supported languages for note-naming available as keywords \score { noteNames = nederlands ... } or if you want it to apply to every score block in a file put it in \header block?
