How does one 'chat' on it.
With an IRC client. There are many for all sorts of platforms.

Linux/*NIX graphical: X-Chat
Linux/*NIX command-line: irssi (very good!)
Windows: X-Chat (don't use mIRC please)
Mac OS X: Snak

In X-chat Freenode should already be configured and rady to go in the servers list.
Typing:
/join #gnumed
will join the #gnumed channel
I'm going to go on now and see if anyone is there. Maybe I'll start lurking from now on, I didn't know we had an IRC channel?
