"su -c gm-bootstrap_server" would work, too. It would ask
for the *root* password where as "sudo gm-bootstrap_server"
would ask for the user's password.

However, su -c works in more situations because sudo needs
to be installed and configured first. su is likely to be
installed by default on most machines since it is part of
the "login" package (in Debian anyway).

So on the live CD the difference will not matter because
sudo is already working.
