Not that I have yet tried it, but I had thought that what is already available
"open" for OCR -- Tesseract OCR -- fed from, say
gscan2pdf (for individual document processing)
eikazo (batch mode)
should do a pretty good job, no?
Or are you talking an app that would slickly insert the text as a layer within
a PDF, so that it will reside within the same single document *file* ?
