Look for Xcode on your OS X discs (or download it free from Apple).
It will give you gcc + nice GUI optionally riding on top of it.
After that you may compile unix software all by yourself or
use the compile instructions from a porting/packaging system
(like Fink or Darwinports).

If you need the latest development version, the description of
groff in, say, darwinports can be changed to download and compile
whatever tarball you want (or pull sources from CVS).
