j'ai essayé au pif
        \override Stem #'flag = ##f
et
        \override Stem #'flag = #point-stencil

mais ça ne fait rien

Au passage je trouve ici ou la les deux notations ##f et #point-stencil, 
parfois ça fait la mm chose, parfois ça plante tout... Encore un truc à 
creuser...
