I indeed think that wrong avpf could be part of the issue.
However, disabling it isn't a long term fix.
The avpf settings should match the servers ones.
Nicolas, concerning account creation from settings view, it should work.
You just can't enter the password because Linphone should ask you to enter it when the account is added.
I have also seen this in the logs :

This could be caused by the missing password (however, please
make sure that the account is working).
Please toggle off and on "register" in settings > account to
see if you have a password prompt. If not, try to close and reopen
Linphone.
If this still doesn't work, create an account via the assistant instead (in Home > assistant). You could then enter a password.
Test with a linphone account newly created, and with your OVH account.
That said, keep in mind that I am not supposed to give this free support on my work time, and I can't give you more time (regarding interoperability between Linphone app and external sip provider) as I don't have enough knowledge yet to debug quickly this kind of issues.
I still do my best to answer often on all mailing lists, but I
can't do this all day long.

(First of all, I’m not sure it’s convenient to post your log file on a public mailing list…)
From your logs which I quickly looked at, it could be that there is a mismatch between AVPF settings between the client and the server. You may want to try disabling it. See the SIP 200 OK answer before this line:

Installation of 4.2 version is ok this time after uninstalling properly the older version.

- Transport : TLS
- Route : (empty)
- Paramètres de contact : message-expires=604800
- Intervalle standard RTCP AVPF (sec) : 1
- « S’enregistrer » « Publier la présence » et « Activer AVPF » turned to on
- « Activer ICE » turned to on
- Serveur STUN/TURN : stun.voip.ovh.fr
