Hi Julien and Lutz,
It seems that Qsynth restarts the FluidSynth engine whenever a
SoundFont is added or removed. From what Julien wrote, FluidSynth
doesn't need to be restarted to add or remove SoundFont banks, so this
seems to be a Qsynth issue.

use jack for audio and alsa for MIDI.
Perhaps you should tell us a bit more about your setup:
Fluidsynth-version, audio/MIDI drivers used, OS.
