I don't use Evince so please forgive me if my comment is off: What is
that % at the end of line good for?

  viewer_pdf = evince %s %
                         ^?

What do get if you try

  viewer_pdf = evince %s &
                       ^

or even

  viewer_pdf = (evince %s) &
