No kidding. I usually have 3 monitors arranged in a semi circle around me 
while developing software, and I believe it increases my productivity by 
magnitudes. 
Through the plugin architecture you an enable such thing: leave it to the 
operating system GUI / desktop manager to place windows/widgets on 
different screens, and simply cretae the user interface in a way that you 
can detach sub-windows and view them as standalones. Windows of course 
will always limit you to 2 monitors, but with any X-Windows based GUI 
there are no limits at all.
