The only on-air reference I can recall was in the episode where the Enterprise went to a planet to relocate colonists. The plant "spores" were fired at Spock and he got the "hots" for Leila Colomi. She asked if Spock had a first name and he smiled at her and said (direct quote) "You couldn't pronounce it".
Of course, Spock may be his first name, with non-Vulcanslike Leila just _assuming_ "Mr Spock" denotes Spock as the last name. In reply, rather than correcting her, Spock might have felt it more polite to just say what he said. That is what I infer from being reminded Spock likely has a _last_ name not stated on-air, from some a posting at
